Weekly Healthy-ish Meal Plan 1/27/13

My biggest problem with trying to lose weight is trying to find healthier recipes that both my family and I will enjoy. I am more adventurous with my palette, as is Dave, but the kids are a tough crowd. Pinterest has been a great resource for healthier recipes. My only issue is that once I get into Pinterest I get SUCKED IN! I lose focus and start pinning fabulous outifts that I will never buy and beautiful home decor that I am way too poor to purchase.

I posed a question on my facebook page the other day to see if anyone would be interested in seeing the recipes that I am actually making. Surprisingly enough people said yes! I figured, why not. I attempted to post recipes before but it became way too involved, so I am going to make it easier on myself. I am going to post the links to the websites that actually wrote the recipes so you can see their beautiful pictures of the food and decide for yourself if it looks good enough for you to eat!

If I have something special to tell you about one of the meals that I made I will make sure to share it with you too! I always find that some recipes that I find are AMAH-Zing,while others totally suck balls. Either way, I will let you know. I don’t want to steer you wrong! Swearsies!

 Breakfasts:

Kroger Active Lifestyle Weight Control Oatmeal

Lunches:

Black Bean Quesadillas – I made a bunch of these and froze them. I have never froze any food that I have prepared before so I am interested in finding out if they are as yummy as they were when they were first made. These were really good. I am not the biggest black bean fan but all of the flavors mixed together so well. I can’t wait to eat another one!

Dinners:

Cheese Manicotti w/ Salad and Garlic Bread

Crock Pot Chicken Stroganoff w/ Salad and Pretzel Rolls

Country Fried Steak with Mushroom Gravy w/ Mashed Potatoes and Corn

Chicken & Shiitake Marsala w/ Roasted Potatoes & Veggies

Angel Hair Spicy Shrimp

As you can see, there are only 5 dinners for the week. With the way our hectic life is, we usually only eat 5 meals together during the week. (Sometimes less.)

    I imagine it must be very difficult to make meals that will please everyone’s tastes at the dinner table. Sounds like you’ve picked some winners though! Would love to try the black bean quesadillas… Love making food you can freeze for later :)
